Fall Oatmeal Protein Bake using New Chapter Complete Organic Plant Protein+

With the sudden drop in temperature in NYC, I’ve had to up my Power Parfait game (literally overnight!) Introducing the Fall Oatmeal Protein Bake!!

Made using New Chapter’s Complete Organic Plant Protein+ in vanilla, together with oats, eggs, apple and grounding spices including nutmeg and cinnamon this warm breakfast is my current go-to. I love that I can bake a big batch at the start of the week (or at 4 AM when I’m not sleeping… thanks, to the full moon and mercury retrograde!)

Ingredients:

  • 2 cups plain rolled oats

  • 2 scoops New Chapter’s Complete Organic Plant Protein+, vanilla

  • 1 tsp cinnamon

  • Pinch of nutmeg (optional)

  • 1 tsp baking powder

  • ½ tsp sea salt

  • 1 tbsp chia seeds

  • 1/4 cup honey or maple syrup

  • 2 large eggs

  • 3 tbsp coconut oil + extra for greasing pan

  • 1 ¾ cup almond milk

  • 1 generous handful pecans or walnuts, chopped 

  • 1 large apple, chopped

Directions

  1. Preheat oven to 350F. Grease an 8×8 inch baking dish, or large pie plate.

  2. In a large bowl combine all the ingredients and stir until everything is mixed evenly.

  3. Bake for about 40 minutes, or until golden brown and firm to touch. 

  4. Slice into portions, or serve family style and scoop out with a spoon.

  5. Serve with a dollop of yogurt and seasonal fruit.

The Fall Oatmeal Protein Bake can be stored in the fridge for up to a week, simply heat and serve when ready to eat!
