You may be surprised to hear that I actually don’t use recipes most of the time. Yes, if I’m having friends or family over I may pull out Go with Your Gut and whip up Shepard’s Pie or make one of the new dishes from Thin From Within (think Crispy Rice Skillet, Cheezy Broccoli Soup, or my Rockstar Veggie Burgers). But most of the time, I look at what I have on hand and then let my creative juices flow.
The fact that I don’t follow a recipe every night doesn’t mean that I’m not prepared. It’s quite the opposite actually – I’m able to whip up dinner because I’ve done some work in advance: I’ve meal prepped.
Meal prep doesn’t have to mean that you make a whole recipe in advance, or that you need to have all your meals in individual containers in the fridge ready to heat and eat (although it can mean that too). Meal prep simply means that you’re setting yourself up for food success for the week, whatever that translated to in your life.
Your meal prep game plan can change based on who you are and what you’ve got going on in your life. It might mean that you roast up a tray of root veggies, or make a big batch of quinoa and hard boil some eggs. Another week, you might try a slow cooker recipe or prep a casserole in advance. And yet another week your meal prep might just mean you go to the grocery store and have your fridge stocked with all the essentials.
